Potatoes with Garlic Scape

  • 6 small golden potatoes, such as Yukon Gold

  • 3 garlic cloves, sliced thinly

  • 3 green garlic scapes, minced*

  • Extra-virgin olive oil

  • Coarse sea salt or kosher salt


Step 1    

Preheat the oven to 350F. Wash the potatoes. Boil a pot of water, throw the whole potatoes in. Let cook for 5 minutes, then remove potatoes and place in a bowl with ice water. Let sit for 2-5 minutes, the skin will then be very easy to remove with your fingers. Remove the skin.

Step 2    

Slice the potatoes thinly, then slice the garlic thinly. Place potatoes and garlic into a baking dish, then toss together with a generous amount of olive oil, and throw in the minced garlic scape and salt.

Step 3    

Cover the dish with aluminum foil. Place in the oven and cook for about 20 minutes, until the potatoes are soft when pierced with a pairing knife. Serve as a side for red meat, fish, or poultry!

*If you do not have access to garlic scape, that is fine! No need to fuss! Simply omit from the recipe—it will be just as tasty without!
