Catalan Tomato Bread

  • 6 thick slices country-style bread

  • 3 garlic cloves, halved crosswise

  • 3 ripe tomatoes, halved crosswise

  • Extra-virgin olive oil

  • Coarse sea salt or kosher salt

  • Freshly ground pepper

Step 1    

Stove-Top Method: Heat a griddle or cast-iron grill plate on medium high heat. When pan is good and hot, add bread and cook about 4 minutes per side, until browned and crisp.

Grill Method: Light a grill. When the fire is medium hot, grill the bread for 2 minutes per side, until browned and crisp.

Toaster Method: Put the bread in the toaster for super easy prep!

Step 2    

Rub each piece of toasted bread with a halved garlic clove and halved tomato—squeeze the tomato well, to leave a thin layer of tomato juices and seeds on the bread. Then drizzle with olive oil and sprinkle with salt and pepper.

I ate this for the first time in Collioure, south-west France. Enjoy in true Catalan-fashion with a glass of red wine, tempered prosciutto, and some aged Spanish cheese! A super easy appetizer, certain to be a crowd pleaser (even my picky parents loved it!).
