Aged Zucchini With Garlic

  • 2 Zucchinis, shaved very thinly, 1/16” by mandoline or hand

  • 8 cloves of garlic, sliced thinly

  • Kosher salt

  • 3 Tbsp apple cider vinegar

  • 10 oz Extra virgin olive oil*

Step 1: Clean the zucchinis well, then slice. Next slice the cloves of garlic.

Step 2: Fill a mason jar with olive oil, vinegar, garlic, and salt. Gently place the ribbons of zucchini inside the jar, then seal. Let sit at room temperature for at least two days before enjoying (this allows the garlic flavor to infuse in the oil).

I learned this recipe in the quiet mountains of Abruzzo, Italy. Serve with crusty bread and some Parmigiano Reggiano…a delicious, simple appetizer.
